Pepe Jijón founded the farm in 2010. Most of its 120 hectares are protected or replanted cloud forest, and coffee grows on only a few of them. We have carried Pepe's Sidra since 2025, and this year we visited Soledad for Pepe's birthday with Pepe, Jose and their family. That visit showed us the care they give to the land, to the people who work it and to every lot that leaves it. At the house we cupped the season's Sidra lots, and Lot 22/32 was the one that stood out. The number is a tracking label from the farm's records. It is also how we chose this coffee, so it stays on the bag.

Grapes open the cup, sweet and juicy, and kiwi follows with a bright green acidity that keeps the sweetness lively. Nectarine fills the middle of the cup with ripe stone-fruit weight, and as it cools honeysuckle rises in the aroma. The texture is silky, and the finish is long and clean.

Sidra is an Ecuadorian selection, long described as a cross of Red Bourbon and Typica from a Nestlé breeding station in Pichincha. Genetic work now places it within the core Ethiopian genetic group, consistent with a selected Ethiopian landrace. Its cup is known for florals and bright citrus, with a tea-like clarity in washed lots. The plant grows tall, and its coffee is long and narrow.

Wave is Pepe's name for his fermentation style and a way of life, its about respecting the coffee, letting it guide you through the process, and revealing what the best outcome is based on how fermentation responds. Warm in the fermentation tanks and cool in the drying rooms. He makes every change gradually. The cherries are picked and depulped the same day, fermented in tanks and washed in fresh spring water. The parchment then dries over about thirty days on covered raised beds, mostly in a dark, air-conditioned room. Moving the coffee gently through each stage is the whole intention of the method, and you taste it in a cup of grapes, kiwi, nectarine and honeysuckle, clean and clear throughout.

//cdn.shopify.com/s/files/1/0836/0978/0533/files/90Artboard22copy4_4x_a9d8b250-4c49-499d-b4bb-7c656d05540e.png?v=1792223366
