The lot was picked at 1,600 meters on 10 March 2026. Its cherries were then processed by Lost Origin, which works from a facility above the Casa Bruja brewery in Panama City. Franz founded the lab in January 2023 to bring the controlled fermentation of brewing to Panamanian coffee. In its first year, the lab produced the coffee that won the 2024 World Brewers Cup. This is the first coffee we have purchased from Lost Origin.

Raspberry tea opens the cup, bright and lightly tart, and ripe guava fills the middle with a soft tropical sweetness. Candied grape and strawberry carry into the finish, sweet and jammy, and they grow rounder as the cup cools. The body is light but coating, and the sweetness lingers well after the last sip.

Gesha is an Ethiopian landrace, gathered from the forests near Gesha in the southwest of the country in the 1930s. In the cup it is prized for its aromatics, and jasmine, bergamot and stone fruit are among its most familiar notes. The tree grows tall and open, with long, delicate branches. It usually produces its first crop in its third or fourth year. It has intermediate resistance to leaf rust. World Coffee Research rates its quality potential highest at elevation, and in Central America its florals come through most clearly above 1,300 meters.

In a natural, the coffee ferments and dries inside the whole cherry. Lost Origin fermented these cherries in custom-built stainless steel tanks, guided by two of the lab's selected cultures, coded LOY-007 and LOB-002. The fermentation ran for five days at an average of 21°C. The coffee then dried for 28 days in rooms where temperature and humidity are held steady. Choosing the culture and then controlling every condition around it is the intention of the method, and you taste it in a cup of raspberry tea, guava, candied grape and strawberry, ripe and clean throughout.

//cdn.shopify.com/s/files/1/0836/0978/0533/files/88Artboard22copy2_4x_c276a2fd-6db1-4b5c-9e77-b95e9b0b58f2.png?v=1791619984
