Outside of our comfort zone, this coffee is a limited release for us, an experimentation with processing methods that fall outside of our normal. It is always good to push your boundaries and our desire to work alongside Edison and Juan of KWC allowed for this lot to hit our cupping table.
A surprisingly delicate conferment, roasted to highlight the uniqueness of the processing without sacrificing what we love the most out of washed Caturra. This coffee being finished as a washed helps to alleviate some of the overwhelming cup qualities that tend to come with this style of processing. This coffee drinks like a clean natural and we couldn't be happier.
In 2018, Edinson and his girlfriend, Luz Angela purchased La Quebradita, a beautiful coffee farm nestled in the central mountain range in Timaná. Today, La Quebradita serves as a center for coffee processing and agricultural innovation, where Edinson experiments with various techniques like yeast inoculation and soil care. His goal is to create specialty coffee with unique and reproducible flavors.
The coffee cherries at La Quebradita are carefully picked at peak ripeness before undergoing two rounds of fermentation. The result is a truly exceptional cup of coffee that reflects Edinson's commitment to quality and innovation. First, tank fermentation for 72 hours before being spread out to partially dry. Once the expected Brix level is reached, the coffee was rehydrated for and additional 72 hours and introduced to specific yeasts and red fruit. The coffee was then pulped and washed, laid out to dry on raised beds.
