At Granja Paraíso 92, the focus is on constant curiosity and innovation. Wilton utilizes a thermal shock method where cherries are sanitized with UV light and ozone before undergoing controlled anaerobic fermentation in bioreactors. The coffee is then hit with hot and cold water to lock in its complex aromatics before being decaffeinated in Colombia using Ethyl Acetate derived from local sugarcane. The result is a cup that is bright, syrupy, and bursting with red fruit character.
