Typica Mejorado while named after typica traces its genetic roots as a hybrid of Bourbon and Ethiopian Landrace, known for its complexity and clarity.
Processed as a traditional washed coffee. Ripe cherries are hand-picked and depulped on the same day. The coffee is meticulously washed in fresh spring water to remove all mucilage, ensuring a clean profile. The beans are then slow-dried for up to 30 days on covered raised beds, allowing for deliberate flavor development.
This coffee represents the new frontier of Ecuadorian specialty coffee; a shining example of dedication to meticulous processing and the exquisite potential of high-altitude Typica Mejorado.
