Luis uses an extended fermentation processes that we call “cochadas” which means small harvests. Coffee is a fruit, and like any other fruit, it doesn’t grow evenly. The harvest process involves a meticulous three-day picking period. To maintain demand, he uses this process by starting the fermentation in a closed tank after de-pulping the coffee cherries. Every 24hrs he will de-pulp the coffee and add it to the same tank, layering it up to the 80th hour, then completely washes it and extends it to dry.

Luis has 4 hectares of land in production, only 3 hectares are in this Caturra.

Luis's dedication to the craft, a passion inherited from his parents, has led him to spend the last 15 years focusing on specialty coffee production. Supported by his family, he has nurtured both his two children and 15,000 coffee trees yielding thriving and flavorful coffee.
